3 Affordable Asparagus Salads You Can Make In Under 10 Minutes

If you're like any other grown, working person, you're probably exhausted by the time you realize it's time for dinner. But skipping the last meal of the day isn’t healthy, nor does a late night dinner have to be unhealthy. If you’re bored with last night's leftovers, take out, and good ol’ sandwiches, here are three healthy and time friendly recipes inspired by asparagus that are sure to satisfy yourcravings.

1. Garlic drizzled asparagus salad over turkey bacon

This recipe is perfect for those of you with an appetite. Feel free to double up on the ingredients.

What you’ll need:

  • 10 garlic cloves
  • 1 ½ pounds of asparagus (trimmed and halved)
  • 5 strips of turkey bacon
  • 1 tbsp of Rosemary seasoning
  • Salt and pepper (to taste)
  • 1 tbsp of extra virgin olive oil

Carefully peel and chop the garlic cloves into small chunks. Then, alve and trim the asparagus so each part measures about an inch. In a nonstick pan, place the bacon strips and let them cook evenly on each side. Follow by cutting each strip into any size you’d like (optional).

Into the same pan, add the extra virgin olive oil, asparagus, and garlic cloves, and cook under low-medium heat. Once the garlic reaches a golden tone, drizzle what you’re cooking with rosemary, salt, and pepper. Stir and serve over the turkey bacon.

2. Oven roasted asparagus with cherry tomatoes and spinach

What you’ll need:

  • 1 pound of asparagus
  • ½ pack of spinach leaves
  • Cherry tomatoes
  • Sugar-free strawberry salad dressing
  • Coarse sea salt (to taste)

Trim and halve the asparagus. Follow by slicing the cherry tomatoes in half and placing everything on a sheet pan. Drizzle the asparagus and tomatoes with sea salt and place in the oven for 8 minutes under 450 degrees.

Once the time is up, add the spinach, asparagus, and tomatoes into the bowl. Follow by pouring the strawberry salad dressing (or any dressing of your choice), and enjoy!

3. Mixed bean salad with beets and cooked asparagus

What you’ll need:

  • 1 can of sliced beets
  • 1 can of pinto beans
  • 1 can of black beans
  • 1 pound of asparagus
  • 3 garlic cloves
  • Complete seasoning
  • ½ tbsp of extra virgin olive oil

Peel and chop the garlic into small chunks and cook them with the halved and trimmed asparagus for 5 minutes under medium heat. Drizzle what you’re cooking with a ½ tsp of complete seasoning. Then, drain the pinto and black beans and place them into a bowl. Add as many slices of beats as you’d like, and incorporate the cooked garlic and asparagus. Voila!

These delicious salads only take less than 10 minutes and are a great way to fight hunger during a time in which we’re tired. If there are any leftovers, feel free to take them for lunch.
